  • 4 large egg whites at room temperature
  • 100 grams of castor sugar
  • 100 grams of sifted icing sugar
  • 4 food coloring gels or pastes
  • For the eyes and mouth, you need a small amount of ready-to-roll white and black fondant icing

Apart from these ingredients, you will also need

  • A 4 cm round cutter or circle
  • 1 large piping bag with a 1 cm open star nozzle
  • 4 small paintbrushes


You need to follow the following steps to make the unicorn poo meringues.

At first at 120 C/100 C fan/gas, half heat the oven. Line the two baking sheets with parchment. With a pencil and a 4 cm round cutter, draw 22 circles on the parchment.

Second, whip the egg whites until they form stiff peaks. Then, a spoonful at a time, add the caster sugar and keep whisking completely between every addition of the caster sugar until the mixture is glossy and stiff. Keep repeating the sugar icing steps.

Third, in a tall glass or jug, put the piping bag nozzle. So, from the nozzle to the top of the bag add a thin layer of the four colored food gels. Then, spoon in the meringue mixture.

Fourth, use the circles as a guide and pipe the meringues on the tray. Bake for 20 minutes and then turn it down to 100 C/80 C with one-fourth fan/gas. Cook these until they are completely cooked. After it is completely cooked leave it in the oven to let it cool.

Fifth and the last step: to create the eyes and mouths, mold in small pieces of white and black fondant icing. Stick these eyes and mouth on the cooled meringues by dabbing each piece with royal icing.
