Those living in the south take pride in their desserts. There are many popular desserts in the southern states, namely: sugar pies, chess pie, hummingbird cake. The lime pie is a very famous dessert. In many convenience stores, we can find Moon Pies. The Moon pies are not actually pies but are like sandwich cookies. You can make chocolate or lemon chess pies which are easier to make. These can be served in a single crust and contains thick sugary fillings. Different people have different choices. For instance, people in the Midwest prefer apple pie and cheesecake. Those of the East like Boston cream pie and black and white cookies. And the list is endless. It all depends on what people like to eat the most.
Southern Desserts: Hummingbird Cake
Hummingbird cake is a spice cake that is made with mashed bananas, pineapple, pecans cinnamon and vanilla extract. The combination of texture and flavors are complex in the hummingbird cake. The sweet pineapple mixes with the frosting and pecans to give you a good crunch. You can replace the cream cheese frosting with the mascarpone to make a cake that is more creamy and with a very good flavor.
Hummingbird Cake with Mascarpone Frosting
Here are the ingredients to make hummingbird cake:
- 1 pound of peeled bananas
- 8 oz of crushed and drained pineapple
- I cup of canola oil
- 2 teaspoon of vanilla
- Two and half cups and 2 tablespoons of all-purpose flour
- 2 teaspoons of ground cinnamon
- 1 teaspoon of baking soda
- 1 teaspoon of salt
- One and a half cup of powdered sugar
- One cup of brown sugar
- 3 large eggs
Ingredients to make mascarpone frosting:
- 3 cups of mascarpone cheese
- 2 cups of powdered sugar
- 1 cup of chopped pecans. Use extra pecans for garnishing
- 1 teaspoon of vanilla
To make the hummingbird cake follow these instructions as listed:
Heat your oven to 350 degrees. Apply butter to three round cake pans of 9 inches.
Blend the bananas, pineapple, oil, and vanilla in a blender and make them smooth.
In the third step, whisk the flour, cinnamon, baking soda and salt in a bowl
Whip the sugar and eggs in another bowl until it is smooth. Whip the bananas mixture. Keep whipping the flour until there are dry spots of the flour. Bake them in a pan until they are golden brown and cooked well.
Let the cake cool for 10 minutes and then take it out in wire racks to cool them completely.
Now make the mascarpone frosting. Whip the mascarpone until it is smooth and then whisk the sugar till it is light fluffy and can be spread easily. Whisk the pecans and vanilla till they are completely mixed.
When the cake is cool, put the frosting on the top and then put a second layer on it. Repeat the same with the rest of the cake. Use the frosting and frost in on the top and sides of the cake. Garnish it with the remaining pecans.
